Mushroom and Zoodle Spaghetti!
This is a favorite in our house! Even the kids eat it without complaining! Thanks to the Paderno World Cuisine A4982799 Tri-Blade Plastic Spiral Vegetable Slicer
we can have the same texture as noodles without the grain! Before Paleo we were huge pasta eaters… now we don’t miss it at all and my husband actually prefers zoodles over spaghetti noodles!
Ingredients:
Zucchini (Run it through the Paderno World Cuisine A4982799 Tri-Blade Plastic Spiral Vegetable Slicer
or use some mad knife skills)
Mushrooms (Optional. You can use grass fed beef)
Butter (or animal fat or coconut oil)
Simple Marinara (recipe found here)
Instructions:
Bring a pot of water to a boil, boil zucchini noodles until tender. Drain and allow to sit in drain for a while to sweat out the excess liquid.
Saute Mushrooms in a pan. We like to use butter for this, but you can use any type of animal fat or coconut oil!
Combine zoodles and mushroom with Simple Marinara and you have a low calorie, low carb, vegetarian spaghetti!
For my non-vegetarian friends… grass fed ground beef would be great in this!

We seriously use the spiral slicer three to four times a week! I am going to post a recipe a cold cucumber salad using the spiral slicer! It was delicious! The texture is what does it for us!

The machine is great! Easy to clean, sturdy and I like that the extra blades are built into the side of the machine!

The slicer and a food processor are my only two paleo recommendations. I have the ninja blender and get by, but a food processor would make things easier.

I want a food processor SO bad. Why do they have to be so expensive? lol

They are expensive. I have had really good luck with thrift stores this year! Like I said, I don’t HAVE a food processor, but my blender works decently enough. I really only use it for Cauliflower! 🙂 My bullet also works well for lots of smaller items like marinara and bulletproof coffee!
