Cheaha State Park in the Fall!

    November 19, 2013 / 1 Comment

Mt. Cheaha State Park, Alabama! We are back in Alabama! We decided to revisit one of our favorite spots! Mt. Cheaha State Park! I wrote a blog post about it HERE back in August. The fall colors are starting to shine through now and the park was packed with people wanting to look out over the valley to see the fall beauty! Cheaha State Park offers a unique opportunity for home school families. Along the trail there are numerous information kiosks that identify geophysical and biological features of the area. Whether traveling for exercise or education, it is definitely an exciting trip that we will make again.     While “off the…

Christmas Craft: Our Thankful Tree and Countdown to Christmas!

    November 13, 2013 / 4 Comments

Our Thankful Christmas Tree and Countdown Chain!  We decided to do a 40 days of Christmas countdown this year! With space being limited in the RV I decided to do an all in one countdown and thankful tree! We used construction paper to cut strips of red and green. We each got 10 since there are 4 of us and 40 days until Christmas! We each got to write 10 things we are thankful for and attach it to the chain!   Each day we’ll remove one link and read it out loud and discuss it as a family!    Yes, my 5-year-old is thankful for Batman!

    Paleo Spaghetti (Squash)

    November 5, 2013 / 5 Comments

Paleo Spaghetti Squash!   Ingredients: 1 Medium Spaghetti Squash (Cut in half and scrap the seeds out) Home made tomato sauce (I used 1 can tomato paste, 1 can crushed tomato… no sugar, Cooked ground turkey and various italian spices)     Instructions: [wp_ad_camp_2] As seen in the picture above… poke holes in the squash, lay upside down on a baking pan, pour in about 1/4 cup of water and bake at 350 degrees for about 30-45 minutes until a knife will pierce through the skin easily. Remove from oven and flip over. Using a fork pull the “meat” away from the edges and it will come out in strings…

    Paleo Adult Lunch Box #5

    November 5, 2013 / 2 Comments

[wp_ad_camp_2] Paleo Adult Lunch Box This is an example of one of the many lunches I pack for my husband! Avocado Summer Sausage (Nitrate free, organic) Hard Boiled Egg Fruit/Nut Mix (No Peanuts) Sweet Peppers! These things are tasty!! Turkey Jerky He also takes and apple and banana everyday!   Yes, These are simple. That is the point. We wanted to do Paleo, but really don’t have any time to do baking or cooking. I already cook several nights a week (almost 7) and he really needed more “finger foods” since he is nowhere near a fridge or a microwave! [wp_ad_camp_3] Want to lose weight? Follow me on my…

    Paleo Nutella

    November 5, 2013 / No Comments

My son LOVES Nutella, but the ingredients in Nutella are not good for him. I decided to use what I had on hand and try to make my own Nutella! Now, Nutella is made from Hazelnuts, and the only thing I had on hand was Cashews and Pecans. They worked just fine! Since I had never made this before I don’t have an actual recipe… but I can tell you that I used my Omega Juicer and my Ninja Blender to blend, crush and turn the nuts (pecan and cashew) into butter. I then added 1 tablespoon 100% special dark cocoa powder. -Add raw honey to taste. However sweet you…
