Cloudcroft, New Mexico Nestled in the mountains of New Mexico is Cloudcroft. On our way from Carlsbad, New Mexico we decided to take a more scenic route to get to Gila Bend, Arizona. We stopped on New Year’s Day just outside of Cloudcroft, New Mexico at Rio Penasco RV Park in Mayhill with the intention of playing in the fresh snow in Cloudcroft and relaxing for a few days. Fruity Pebbles Marshmallow Treats
Fruity Pebbles Marshmallow Treats Ingredients: 6 cups Fruity Pebbles Cereal 5 1/2 cups Jet-Puffed Marshmallows 5 Tbsp BUTTER (Real butter not Margarine) Instructions: In a large pot on very low heat melt the butter. Allow butter to turn slightly caramel colored with a strong nutty aroma. Add marshmallows and stir, stir, stir until completely melted. Don’t allow to burn. Take off burner and add in cereal. Mix well. Turn out into a pan lined with parchment paper. I used my 9×9 stoneware, but any pan with sides will do. Allow to cool and cut up into squares! ENJOY! Yuuummm… the kids love these!

Carlsbad Caverns National Park New Year‘s Eve… we decided since we are en route to Gila Bend, AZ we would make a few stops along the way since we rarely get time between jobs to actually enjoy the journey. Our first stop was the town of White‘s City, New Mexico. There really isn’t much to the town… AT ALL… but the campground was right outside the National Park entrance. We were told that the campground was built and designed in the 50’s, and you could tell. The spaces were tiny! The good part is that they are full hookups and 36.00 a night. The RV park was a NO FRILLS…

Update on our life and travels! Past six months: Whew! It has been a whirl wind experience this last 6 months! Last I blogged we were in Tennessee! Since Tennessee we went to Denver, Colorado for a few months, and then Tomah, Wisconsin! We have been having so much fun that I keep forgetting to blog… and we have had HORRIBLE internet! Everyone is doing well and still enjoying traveling! Present: We are currently in route to Gila Bend, Arizona from Weir, Texas where we spent time with family and friends for the holidays. This year I had the opportunity to do a little cookie baking with my sisters who are usually away at college. It was great! I love spending time with them and spending time in the kitchen is a bonus! When I was a kid my grandmother used to make Mexican Wedding Cookies every year at Christmas. Since she passed away there haven’t been any made. Peppermint Popcorn Bark
Ingredients: 1 bag popped popcorn 10 candy canes crushed 1 package white chocolate coating Instructions: Pop bag of popcorn and let cool. Remove un-popped kernels. Crush Candy Canes Add Candy canes and popcorn to large bowl Melt Chocolate coating as instructed on package. Pour melted chocolate and carefully stir until all the popcorn and candy cane pieces are coated. Turn out onto wax paper and spread. Allow to cool and harden. Once hardened enjoy or seal in a gallon sized ziplock bag!

This chicken tetrazzini recipe came from a long time friend of mine. I made it and my husband and kids ate it and had second (and third) helpings so I thought I would share it with you! Ingredients: 12 ounces spaghetti 1 1/2 teaspoons cooking oil 1/2 teaspoon salt 1 1/2 tablespoons butter 1/4 cup chopped onion 1 small clove garlic, minced 2 cans (10 3/4 ounces each condensed cream of chicken soup) 1 cup chicken broth 1 teaspoon of seasoned salt 3 cups (12 ounces) shredded American cheese 4 cups diced cooked chicken (I buy the rotisserie chicken from the grocery store) 2 tablespoons chopped fresh parsley or 1…

Peanut Butter Balls
I sent these to work with my husband and they were a HIT! They taste just like giant Reeses Peanut Butter Cups! They are so creamy on the inside with a crunchy chocolate shell! Ingredients: 1 cup powdered sugar 1/2 cup creamy peanut butter 3 tablespoons butter 1 lb dipping chocolate Instructions: Cream together sugar, peanut butter and butter. Roll into 1.5 inch balls Freeze until stiff Melt Chocolate in a double boiler Dip frozen peanut butter balls in chocolate and let cool on wax paper.
