My husband (a bomb technician, hence the name) was really wanting chili so I came up with this recipe to fit with Paleo! This was by far some of the best chili (Paleo or not) that I have ever had and my husband agreed! My 7 year old ate four bowls because he loved it! You do not even taste the vegetables in it so it is a great way to get the veggies in the kids (and the husband) without a fuss! Super Simple and Super easy, healthy breakfast!! Bell Pepper Baskets Ingredients: One egg 1/2 bell pepper seeded Mushrooms or other veggies Instructions: Cut bell pepper in half, seed Chop mushrooms or other veggies and fill bell pepper half. Coconut Oil coffee! I recently started adding organic, unrefined coconut oil to my coffee in the morning. I use it in addition to my creamer, but some people use it alone with honey or other natural sweeteners. The trick is to Coconut Oil Coffee is to BLEND it using a blender or bullet type device. We spent the days before playing in the sun, getting the RV ready for the freezing temperatures and preparing for the snow! Crockpot Creamy Butternut Squash Soup
Ingredients: 1 Butternut Squash (Seeded, peeled and cubed) 1 sweet potato (Peeled and Cubed) 1 yellow bell pepper (diced) 2 red bell peppers (diced) 1 tbs garlic 1 small onion (diced) 2 small red apples (cored and diced) 1 8 ounce cream cheese (I used Fat Free) Instructions: Add all ingredients to the crockpot with 1 cup of water (or chicken broth) Cook on low for 8 to 10 hours until ingredients are tender. Use stick blender to puree ingredients. Add the cream cheese and allow to melt completely. Stir and enjoy with crackers or bread. **Weight Watchers: 3 points per cup when calculated as a recipe**
