The BOMB Paleo Chili!
My husband (a bomb technician, hence the name) was really wanting chili so I came up with this recipe to fit with Paleo! This was by far some of the best chili (Paleo or not) that I have ever had and my husband agreed! My 7 year old ate four bowls because he loved it! You do not even taste the vegetables in it so it is a great way to get the veggies in the kids (and the husband) without a fuss!

The Bomb Paleo Chili Ingredients:
Two pounds of ground meat. We used turkey and pork.
2 cans tomato paste (JUST tomato pulp)
1 can diced tomato (JUST tomato, water and salt)
4 cups Broth (we used bone broth, but beef or chicken broth will work fine!)
– celery
– zucchini
– carrot
– onion
– crushed garlic
1 tbs of dark cocoa powder. Just trust me on this… it gives your chili and amazing smokey flavor!
1/4 cup Chili powder (this is NOT cayenne and should not be spicy!)
Chipotle powder or cayenne pepper to taste. Remember as it sits it will get hotter.
Salt/pepper to taste.

Instructions:
– Brown ground meat, set aside.
– Add all the veggies with the broth and boil until veggies are tender.
– Add ALL ingredients to the crockpot and cook on high for 6 hours.
The best way to get a thick and hearty chili is to boil the excess liquid out of it! I boil mine until it has very little liquid left! This recipe easy to cook thanks to my Ninja 3 in 1 Cooking System! I was able to brown the meat, boil the vegetables and slow-cook the chili all in one pot! If you don’t have one you should check them out!!

Can you have nightshades or just no tomato? You could totally use just brother and more peppers.

I’ve used a combination of 2 cans of organic canned carrots and 1 can of sliced beets both drained (save liquid if auce to tbick) blended. I use this as sauce substitute for tomatoes. I use for catsup and marinara sauce…adding spices and/or little red wine for marinara sauce…

When you say “2 cans tomato paste”, do you mean tomato sauce? Tomato paste is unbelievably strong. Pls clarify.

This recipe looks good. I don’t have broth and am not keen on chemical- laden stock cubes, and yet it’s likely that the flavour of the broth is important for the taste of the final product. What could i use instead of broth? Also, does the timing of 6 hours on high apply to Ninja’s slow cooker settings? If not, what are the timings for Ninja?

Hi! Have you tried making this as a freezer meal. As a working mom freezer meals come in handy most of the week! So I’m always looking for meals that will freeze well.

I made this and my daughter (6) loved it. She said I make the best chili ever. Question about the tomato paste. My store has the small cans of paste, as well as larger ones. I wasn’t sure with your recipe what size cans you were referring to.
I purchased 2 large cans, but halved the recipe, so I used one large can. It tasted a little too tomato-ey to me. Can you clarify how much tomoto paste?

No wonder! Well now I have one large can to use in place of two small for my regular size batch this weekend.
I added some sugar to cut down on the tomato taste, but my family still loved it. I think they will love it even more after I use the correct amount of paste!

Yes! But please use as much or as little as you like. If it is chili powder it is not spicy.

This was soo good. Cooked it for dinner everyone loved it and the taste. Was surprised when told them there was cocoa in it. I actually added a little more than called for.i also added a jalapeño. . My household loves spicy… thanks for the recipe. Will fix this regularly. . 🙂

You can totally boil until you feel it is done. You might need to keep adding water or broth.

I have the ninja as well. Love it! So did you leave the meat in ther after frying it, add the veggies and broth to it, boil, then just add all the other ingredients and then slow cook? Leaving all the broth still in there, right?

Perfect! This chili recipe is the BEST. I added in extra chili powder, extra garlic, 1/2 tablespoon smoked paprika for that kick, and halved the meat! I will be making this again.

Thank you for this terrific recipe!! It was a chili-kind-of-day here in Wisconsin, but as I’m doing a Whole30 Challenge, can’t have any legumes.
When I found this recipe, I knew I to make The Bomb.
I made only one addition, and that was two large, chopped, red bell peppers. I made one subtraction, which was the cocoa. My guys and I loved it!! Both son and hubby agreed with me that they like this better than my usual chili.

I just made this chili tonight. Almost left out the chocolate because I was scared, but threw it in last minute and it was great!! Took it from tasting like a hearty spicy marinara to a smoky chili. I also added peppers and cumin. Very good!!

OMGosh this is sooooo good. I just made it in my pressure cooker. I followed the recipe but didn’t separate the meat. I added the larger tomato paste and cooked it for 15 minutes. Then on the stove to cook off some of the liquid. Now I crave some crackers. lol can’t have everything. It’s exceptional. I even added the cocoa with faith and it is the best I’ve ever made. I’ve made this chili multiple times and it’s always so great. The first time I used bison meat and this last time was a mix of beef and (unfortunately) some Jimmy Dean pork. The life of a college student can mean less than favorable ingredients, but it also means lots of happy roommates who have been eating the “best chili of their lives” the last few days. I was worried I overcooked the meat by browning before adding to the slow cooker but it tastes great.

One wanted to bring Little Ceasers pizza *shudder* so I am looking for an alternate dinner. Its going to be cold and snowy and Chili sounds perfect. Should cocoa be unsweetened? Is regular cocoa powder okay? Is the chili powder just plain chili or a blend with cumin, etc. but not cayenne?

This looks amazing, and I can’t wait to try it. I’m running out to get the ingredients tonight. Just a couple questions. Is it the 14.5 oz. can of diced tomatoes or the 28 oz.? Also, do I add the 4 cups of broth to the crockpot with the veggies, or do I simmer the veggies in it until the broth is about gone?

I did not boil the veggies first, I was thinking I want the nutrients in the chili. I finally chopped everything threw it in the crockpot with browned meat and the rest of the ingredients and it was THE BOMB! Thank you for this delicious recipe

I absolutely love this recipe. You can use any combination of veggies you want. This time I had some beans cooked up in the freezer so I added them and put in a red pepper. I use my own frozen tomatoes instead of canned ones. I use no sodium added tomato paste and low sodium broth. Very tasty!
