We now have breakfast and lunch ready to go everyday! We just pull it out of the refrigerator, re-heat if needed (breakfast) and serve. This makes my life so much easier, especially since I am not a morning person and the thought of standing in front of the stove at 6:00am is not appealing! I prepare breakfasts and lunches once a week and have healthy, portable meals the whole week! My boys are loving this new routine because it means that they get their favorite foods everyday and they don’t have to wait a long time for me to get coffee going and cook their breakfast or lunch! They often help me make their lunches which cuts down on waste! I bought a Goodbyn Bynto Food Container for each of the boys. I really like these containers because they lock tight, are easy to carry and they hold a good amount of food (even an adult could use it). In addition to the Goodbyn Bynto Food Container I bought clear plastic 2 oz Plastic Shot Cups with Lids for sauces, almond butter and dressings and Silicone Baking Cups for items that I didn’t want rolling around. The baking cups are great if you are going to be able to store your container without it tipping over. I found Small Bamboo Skewers at the local grocery store. These aren’t really necessary, but the kids love them! I cut the pointy tips off after the food is skewered so they aren’t tempted to poke each other with them! If it isn’t in the budget just leave it out! Another great (and cheaper) alternative to Goodbyn Bynto Food Containers is Ziploc Containers like the ones I use for the adult Paleo lunch boxes! Save money and help your budget with these healthy kids lunch boxes!

As some of you know, we home school our kids and travel the country in our RV.  Since we home school we don’t have a real need for packable school lunches. A reader reached out to me to ask if I could do a series on healthy kids lunch boxes that are budget friendly and Paleo! She asked and we delivered! Something awesome came of this! We now have breakfast and lunch ready to go everyday! We just pull it out of the refrigerator, re-heat if needed (breakfast) and serve. This makes my life so much easier, especially since I am not a morning person and the thought of standing in front of the stove at 6:00am is not appealing! I prepare breakfasts and lunches once a week and have healthy, portable meals the whole week! My boys are loving this new routine because it means that they get their favorite foods everyday and they don’t have to wait a long time for me to get coffee going and cook their breakfast or lunch! They often help me make their lunches which cuts down on waste!

I bought a Goodbyn Bynto Food Container for each of the boys. I really like these containers because they lock tight, are easy to carry and they hold a good amount of food (even an adult could use it). The kids were bored this morning so we decided to dig through the craft box! These are made with just a few simple items! 

Need: 

Colored Tape (I prefer paper washi tape since you can re-position it)

Scissors

Glue

Embellishments for eyes and beaks! 

I cut about 3 inches at a time off of the paper towel roll. Folded the centers down to make ears. Cover with tape. Add eyes and beaks!

Couple that with random carolers and you have some serious Christmas cheer!   Stone Mountain Park Christmas had so much to do and see that there is NO WAY we could have seen everything and done it all in one day! Here is a short list of a few of the things we did get to do:  – Road a train around the park (the boys loved this!)  – Watched a short version of The Polar Express in 4D!! This was beyond cool!! They made it snow in the theatre, our chairs shook, wind blew our hair and the animation popped off the screen! It was just amazing!!!  – Played in a 3 story jungle gym. (kids played… mom wanted to pass out by then) – Watched glass makers make hand-blown glass ornaments!  – Fireworks!  – Watched the Snow Angel fly across the sky and ring the bell to start the Christmas Season!  – Watched a high energy Christmas Parade complete with Santa!  The list of things to do and entertainment to watch goes on and on!! We hope to make it back someday and enjoy the other entertainment offerings!

Stone Mountain Park

A few weeks ago we had the fabulous privilege to go to Stone Mountain Park Christmas festival in Stone Mountain Georgia while visiting some friends! We did not know what to expect, but let me tell you… this place far surpassed anything we could have imagined!

This barn had a THREE STORY jungle-gym complete with slides and foam ball shooters for the kids to completely wear themselves out at… and for some of the parents to take a seat and relax!

Once the sky’s turned dark they lights lit up… the whole “town” was glowing beautifully and it was so festive! Couple that with random carolers and you have some serious Christmas cheer!

 Stone Mountain Park Christmas had so much to do and see that there is NO WAY we could have seen everything and done it all in one day! Here is a short list of a few of the things we did get to do:

Winter Storm Atlas was forecasted to bring us lots of snow here in Cheyenne! We spent the days before playing in the sun, getting the RV ready for the freezing temperatures and preparing for the snow! Fortunately it wasn’t as bad as it was forecast, but these Texans still got to have a little snowy fun!

The night before the boys set bowls out to catch fresh snow so that we could make some snow-treats!

First, we made snow-cream! There are a lot of different recipes for this, but I used what I had on hand!

Grant took his weekly bath. 🙂 They played in the playroom while Patrick and I went back through and looked at some of the cool, old wagons. ... and apparently cowboys are supposed to be tough and mean. While we were there we watched a rather long (and funny) video of the history of Cheyenne Frontier Days. It was made probably in the 80’s judging by the hairdo’s and big glasses, but it made me really think that the rest of the country needs to up the ante for their rodeo’s! I would love to see chuck wagon racing in person!! The woman at the front desk was a true gem! She helped us take our family pictures and when we left she gave my boys each a book! They were so excited! The Museum’s hours are 9:00 am to 5:00 pm Daily. Open seven days a week. Heartland Preparatory Academy

Why we chose this name: 

Heartland is the name of our RV manufacturer. This might seem a little weird, but the RV is significant to us. It is where this WHOLE homeschooling adventure began. It is highly possible that I would have never even tried (and loved) homeschooling if my husband had not taken a traveling job and subsequently moved us into an RV to hit the road!

Preparatory was chosen because our children don’t just DO school and worksheets. They are prepared daily for life as an adult. This includes studying hard and acquiring as much knowledge as possible, taking personal responsibility for themselves and  problem solving!

Instructions:

Take a handful of pasta and place in Ziploc bag.

Add a dab of coloring (or a few drops of liquid coloring)

Add a few drops of alcohol or hand sanitizer.

Close bag and move pasta around to distribute color evenly.

Open bag and lay pasta out on drying rack. We allowed ours to sun-dry.

Valentine’s Day Crafts!

Instructions for tissue paper heart:

Cut tissue paper into approx 2 inch squares

Decide what color to use

Wrap square around pencil or marker

Glue to heart with Elmer’s glue

Keep working until the whole heart is covered!

 

Instructions for toilet paper roll art:

Cut an empty toilet paper roll in half and crease into a heart shape.
