We are Texans and if you know anything about Texans it’s that we like our spices! These jalopeno poppers will hit the spot if you are looking for something spicy and Paleo friendly for your next barbecue get together or tailgate party! The traditional stuffed jalopenos have cheese of some sort in it. Pre-paleo we stuffed it with everything from Boursin to cream cheese to cheddar. Now that we don’t have dairy in our diets we were seeking a creamy alternative to the cheeses. That is how guacamole stuffed peppers were born! We already had guacamole made up (I can add the recipe later) so I sliced the peppers down the center, stuffed them with guacamole, wrapped in bacon and stuck a small skewer stick through them. My husband grilled these, but you could just as easily make them on the stove top in a skillet. We thought for sure that when they were cooked that the guacamole would turn brown, but we were surprised to see that it stayed green (and delicious)! What started as some kind of experiment turned out to be a hit! Now we will be making these for every get together! Here is our version of guacamole stuffed peppers. Paleo__Beef_Fajitas

My husband and I try to cook on the grill every weekend. We cook enough to eat for the entire week and incorporate into our dinner and lunch meals. This weekend we grilled some seasoned skirt steak to slice up for Fajitas! We also use the same skirt steak in our omelets and to top our salads with! I use either Montreal Steak Seasoning (Not super Paleo) or Trader Joe’s 21 Seasoning Salute to season our beef with! This is a simple and easy to put together meal that we eat often because we loved traditional fajitas!

Paleo Fajitas Ingredients: 
Grilled skirt steak or other flat piece of beef.

I made it and the whole meal took MAYBE 10-15 minutes to prepare and put in a bowl. Let me tell you… the Chipotle Chicken Bowl will blow your mind! It is THAT good! I can’t wait to make other “rice” recipes and try my hand at Paleotizing some of our pre-Paleo favorite foods! 1 head of Cauliflower washed and cored
1/2 cup chopped cliantro
1/4 cup lime juice
Salt

Ghee, Butter or Coconut Oil

Spicy Guacamole Burger

We were all really craving a spicy guacamole burger, but since we don’t eat bread or additives we couldn’t just go to the local burger joint and grab one! After I made this we didn’t feel like we even wanted to! It was DELICIOUS!! We made a version for the kids that left out the jalopenos so it wasn’t spicy for them, but my husband and I love the heat!   This picture and recipe of our spicy guacamole burger does contain cheese. Field greens

1 Roma Tomato Chopped
1/4 Onion chopped
Garlic to taste. I use around 1 tbs, but we really love garlic!
Cheese (optional) (not Paleo)

Instructions:

Mix together beef and jalopenos.
Make into patties and cook in skillet.
In a separate bowl mix avocado, garlic, chopped onion and tomato to prepare guacamole. Set aside.
Place field greens on plate, Add beef patty and top with guacamole.
ENJOY!
