Avocado Chicken Salad

In our house we have two favorites: chicken thighs and avocado. I was really looking for a way to make a Paleo friendly chicken salad to put into lettuce wraps, but all the recipes had mayonnaise in them. I still wanted the creamy texture of chicken salad so I decided to mash-up avocado with chicken and it was a total hit! I could eat this stuff right out of the bowl! This Avocado Chicken Salad is an ultimate summer salad and is so refreshing and delicious! Here is the recipe for the Avocado Chicken Salad we made:

Ingredients:
1 whole avocado (Remove pit and dice)
2 chicken thighs (De-boned and chopped)
A squeeze of Lime juice
Garlic (powder or crushed)
1/4 cup Cilantro chopped
1/4 cup Red Onion chopped

Pepper (to taste)

Instructions:

We were blown away by the level of accommodating customer service we were shown at Wilder. If you go to Wilder you MUST ask for the Fried Cauliflower. We got it un-breaded tossed in their house tarragon vinaigrette. It was by far the best cauliflower I have ever tasted in my entire life and my (non-cauliflower eating) husband fully agreed. Chef Wes is a culinary genius who truly has a passion for food. Not only was the food out-of-this-world fantastic and creative, the staff was so friendly. Chef Wes and Tia went out of their way to make these travelers feel like locals. If we were locals this would be a go-to dinner and drinks spot!   2. Autentica Mexican Cuisine Autentica is next door to Wilder Bar Cafe. We stopped in because this place was close to our hotel and got great reviews. Traditionally this type of place is not paleo friendly. We did order the barbacoa (brisket in Mexican spices) and it came with beans and tortillas. I made it Paleo-friendly by slicing up the barbacoa and putting it on a salad. The barbacoa was a treat for our mouths. It was so juicy and spiced just right I could have eaten it alone, without the salad!   3. Cultured Caveman Food Cart on Alberta Of course, no trip to Portland is complete without eating at the very Paleo-friendly Cultured Caveman food cart! We visited the one on Alberta and met the lovely Liv of Life, Liberty and the Pursuit of Healthiness. The food at the Cultured Caveman food cart was exactly what we expected. It was a perfect, light, healthy lunch option while checking out all Alberta street had to offer. You won’t find greasy, grain filled foods here. Only healthy and tasty options. We had bacon wrapped meatloaf, ginger-kale salad, sweet potato mash and my favorite: Bacon wrapped, almond stuffed dates. DELICIOUS! [wp_ad_camp_2] 4. Cup & Saucer Cafe Cup & Saucer is a great place in Northeast Portland to catch a quick breakfast. I opted for the vegetable omelet. This omelet was jam-packed with squash, cauliflower, spinach, broccoli and mushrooms without cheese. I ordered a side of bacon and black coffee with it. Not only was it filling, but it didn’t have any sides of greasy hash browns like most breakfast places. They claim to be a vegan, vegetarian, gluten-free breakfast place, but I would add Paleo on to that. They were very accommodating with our Paleo needs and the food was good. They also have gluten-free bread options, but those are not Paleo friendly.   5. Tasty n Sons At Tasty n Sons we found a very interesting and somewhat difficult to understand menu. The meals seemed really inventive and unique. We ordered Shakshuka red pepper & tomato stew, with baked eggs and merguez sausage, which equate to tomato and red pepper stew with lamb sausage and a baked egg on top. It was slightly spicy. It is served with bread, but we just did no eat the bread. We also ordered the above pictures bacon wrapped, almond stuffed dates in maple syrup that were super delicious! We had a fantastic trip to Portland on our 9 day 10 year anniversary road trip! We were lucky enough to find some wonderful, Paleo friendly restaurants in Northeast Portland that I am dying to tell you about! These are likely not perfect Paleo (with the exception of Cultured Caveman), but they work really well.

1. Wilder Bar & Cafe
This place was our #1 favorite place on our whole 9-day trip. They don’t advertise to be Paleo friendly, but I had the wonderful opportunity to chat with Chef Wes and he fully understands Paleo and went out of his way to create the most amazing, tasteful, Paleo friendly dishes! We were blown away by the level of accommodating customer service we were shown at Wilder. If you go to Wilder you MUST ask for the Fried Cauliflower. I heard rave reviews about Against All Grain’s Real Deal Chocolate Chip cookies and decided to try them. I checked out the recipe, but I didn’t have all the ingredients. I substituted some ingredients and let me tell you, these cookies are blow-your-mind good!! My husband and kids ask for them often! My husband’s co-workers have tried them and friends of mine have had them and not a single person disliked them! They are THAT good. Just trust me and try them for yourself! The best part is these cookies are gluten, soy, grain and dairy free! Ingredients: ¼ cup ghee (you can use grass-fed butter if you tolerate it) ¼ cup coconut palm sugar (We like Navitas Naturals Organic Coconut Palm Sugar) 2 teaspoons vanilla extract 2 tablespoons raw local honey  1 large egg 1½ cups almond flour (We like Honeyville Blanched Almond Flour) 2 tablespoons coconut flour (We like Nutiva coconut flour) ½ teaspoon baking soda  ½ teaspoon salt ½ cup chocolate chips (We like Enjoy Life Semi-Sweet Chocolate Mini Chips) [wp_ad_camp_5] Instructions: -Preheat oven to 375 degrees. -Using a food processor (or high powered blender) mix ghee, coconut sugar, honey, vanilla and egg until smooth and combined. -Add almond flour, baking soda, salt and coconut flour and mix just enough to combine ingredients. The cookie will still be soft to the touch in the center. Remove and let sit and cool on a baking rack. -Best enjoyed right away, but if you need to save any cookies place them in an air-tight container.

The baking cups are great if you are going to be able to store your container without it tipping over. I found Small Bamboo Skewers at the local grocery store. These aren’t really necessary, but the kids love them! I cut the pointy tips off after the food is skewered so they aren’t tempted to poke each other with them! Save money and help your budget with these healthy kids lunch boxes!

As some of you know, we home school our kids and travel the country in our RV.  Since we home school we don’t have a real need for packable school lunches. A reader reached out to me to ask if I could do a series on healthy kids lunch boxes that are budget friendly and Paleo! She asked and we delivered! Something awesome came of this! We now have breakfast and lunch ready to go everyday! We just pull it out of the refrigerator, re-heat if needed (breakfast) and serve. This makes my life so much easier, especially since I am not a morning person and the thought of standing in front of the stove at 6:00am is not appealing! I prepare breakfasts and lunches once a week and have healthy, portable meals the whole week! My boys are loving this new routine because it means that they get their favorite foods everyday and they don’t have to wait a long time for me to get coffee going and cook their breakfast or lunch! They often help me make their lunches which cuts down on waste!

I bought a Goodbyn Bynto Food Container for each of the boys. I really like these containers because they lock tight, are easy to carry and they hold a good amount of food (even an adult could use it). In addition to the Goodbyn Bynto Food Container I bought clear plastic 2 oz Plastic Shot Cups with Lids for sauces, almond butter and dressings and Silicone Baking Cups for items that I didn’t want rolling around.
