Winter Storm Atlas was forecasted to bring us lots of snow here in Cheyenne! We spent the days before playing in the sun, getting the RV ready for the freezing temperatures and preparing for the snow! Fortunately it wasn’t as bad as it was forecast, but these Texans still got to have a little snowy fun!

The night before the boys set bowls out to catch fresh snow so that we could make some snow-treats!

First, we made snow-cream! There are a lot of different recipes for this, but I used what I had on hand!

Ingredients: Fresh SNOW, Sweetened condensed milk and Maple Syrup!

This year I had the opportunity to do a little cookie baking with my sisters who are usually away at college. It was great! I love spending time with them and spending time in the kitchen is a bonus!

When I was a kid my grandmother used to make Mexican Wedding Cookies every year at Christmas. Since she passed away there haven’t been any made. This year we found her old cookbooks and what we think was her “secret” recipe! We took a leap of faith and used the old, crumpled, well used recipe. It worked! The cookies only have THREE INGREDIENTS and are SUPER tasty and easy to make! The family was super excited to have an old favorite back!

Here is the recipe we found…

1 cup butter (real butter, no margarine)

1 2/3 cups confectioners’ sugar divided

1 1/2 tsp vanilla extract

2 1/4 cup all-purpose flour

1/4 tsp salt

1 cup finely ground pecans

Instructions:

Preheat the oven to 400 degrees.

Cream the butter and 2/3 cup of confectioners’ sugar until it is light colored.

Add vanilla

Still in the flour, salt and finely chopped nuts (the finer the better unless you like chunks)

Roll a tablespoon of dough into a cylinder shape

Place 1 inch apart on cookie sheet and bake for 12-14 minutes

Take out of oven when done and cool for two minutes.

Roll in Confectioners’ sugar

Let cool COMPLETELY and roll again

Enjoy (best with coffee or tea)

Instructions:

Pop bag of popcorn and let cool. Remove un-popped kernels.

Crush Candy Canes

Add Candy canes and popcorn to large bowl

Melt Chocolate coating as instructed on package.

Pour melted chocolate and carefully stir until all the popcorn and candy cane pieces are coated.

Turn out onto wax paper and spread.

Allow to cool and harden.

Once hardened enjoy or seal in a gallon sized ziplock bag!

My family LOVES these muffins! I love that they are ONLY three ingredients and they have a hidden ingredient that nobody will know is there! Pumpkin!! There is no oil or eggs in this recipe! Just water, pumpkin, cake mix and chocolate! They are so much better for you and I promise you can’t even taste the pumpkin! Plus, if you are on weight watchers, these have a low points value!

Chocolate 3 ingredient muffins

1 boxed chocolate cake mix (I used sugar free)

1 small can of pumpkin puree 15 ounce

6 ounces of chocolate chips

**MAKES 48 mini  cupcakes**

Instructions:

Preheat oven to 350 degrees

Mix together cake mix and canned pumpkin. It is best to use a mixer for about 2 minutes on medium speed to get fluffier cupcakes.

Add in almost all of the 6 ounces of chocolate chips

Put in a muffin tin with liners. Batter is dense and does not rise much so these can be filled to the top.

Add a few tiny chips to the tops.

Bake for 22-25 min until a toothpick inserted comes out clean!

  • Buffalo sauce
  • Reduced fat cream cheese
  • Crushed garlic
  • Blue cheese crumbles
  • Chives (optional)
  • Celery (optional)

Instructions:

  1. Place wonton wrappers in muffin tin and cook at 350 degrees until golden brown. Remove and repeat for desired amount.
