We really try to stay away from all gluten and grain when we started eating Paleo foods 8 months ago. I saw some gluten-free graham crackers at Natural Grocers and they were just so expensive and it has been my experience that most store-bought gluten-free products don’t taste that great anyway. So we skipped them and came up with our own version of S’mores that we actually love more than the traditional version! You can use chocolate bars in the middle or anything else you can come up with! We would love to hear about your fillings!  They were a HIT with all of our guest and we hope that your family loves them too! What you need: GIANT marshmallows (Our’s were gluten-free) Hershey’s Chocolate Bars (also gluten-free) Fire Roasting stick Instructions: -Break apart Hershey bar and set aside. -Place GIANT marshmallow on a stick and slow roast it. Lightly brown the outside evenly all the way around by turning slowly. If it catches fire, blow it out and move marshmallow back from the fire. The key is to not allow it to burn because the marshmallow will flake and you won’t have a nice pocket for your chocolate to fit into. -Once it is nicely browned, use your fingers to remove the outset crust from the marshmallow. -Insert chocolate and press together. -Enjoy!

Pocket S’mores

We really try to stay away from all gluten and grain when we started eating Paleo foods 8 months ago. I saw some gluten-free graham crackers at Natural Grocers and they were just so expensive and it has been my experience that most store-bought gluten-free products don’t taste that great anyway. So we skipped them and came up with our own version of S’mores that we actually love more than the traditional version! You can use chocolate bars in the middle or anything else you can come up with! Pocket_Smores_Gluten_Free_Small
What you need:
GIANT marshmallows (Our’s were gluten-free)

After Duck Dynasty we headed north through Arkansas and then Missouri. From southern Missouri we headed west to our favorite little overnight RV spot in Kansas! We love finding these little hidden RV overnight spots! In this case the one in Parsons is only $5.00 a night with electric and water hookups! It is right in Marvel City Park and next door to the baseball fields and dog parks. There is also a tornado shelter… it is Kansas after all! Next we continued northwest through Kansas and came across another CHEAP place to stay overnight! Hill City is a TINY Kansas town in the middle of nowhere that has $10.00 a night RV sites at their fairgrounds! There are tons of sites to choose from. Ours had water and electric and there was a dump station! The ONLY bad thing is the fairgrounds has manure from all the livestock and the flies were TERRIBLE!!! We are in Wyoming now and we are still killing the Kansas flies! But, for $10.00 I can’t really complain! Once we left Hill City, Kansas we drove north through Nebraska… there really wasn’t anything to look at except this one old barn… To be continued in Wyoming!

We are here in Tennessee and I would like to say we are loving it, but love is not the word I would use to describe our time here in Tennessee! We drove out here with the expectations of really liking it.  We set up at Arnold AFB and got settled in. The longer we are here the longer the tall, tall trees start to close in on us! We were told how beautiful Tennessee is and how we were going to like it. Even though what you can see of it is pretty, we long for wide open spaces and distant scenery. The number one thing that I dislike about Tennessee is the ticks! I didn’t grow up around ticks, so I am not used to finding them in the most disgusting places on our bodies! Since we are right on the lake we decided to buy some fishing poles and try our hand at fishing! The boys were so excited to catch their first fish ever! Ticks, Trees and Tennessee!

We are here in Tennessee and I would like to say we are loving it, but love is not the word I would use to describe our time here in Tennessee!

We drove out here with the expectations of really liking it.  We set up at Arnold AFB and got settled in. The longer we are here the longer the tall, tall trees start to close in on us! We were told how beautiful Tennessee is and how we were going to like it. Even though what you can see of it is pretty, we long for wide open spaces and distant scenery.

The number one thing that I dislike about Tennessee is the ticks! I didn’t grow up around ticks, so I am not used to finding them in the most disgusting places on our bodies! Patrick received this “tool” in the picture above on the first day of work. This is the first time ever the first day of work involved a “tick briefing”! YUCK!

The bonus is we are RIGHT ON the lake… so there is an abundance of swimming, fishing and people with boats! 🙂 And as usual we have had the pleasure of meeting some really nice people. So far our travels have taken us from coast to coast and some of the nicest people we have ever met are fellow RV’ers.

The boys and I were invited by neighbors to go out on their pontoon boat! The boys were so excited! They even got to drive the boat all alone while Brian (the captain) sat in the front and told them which way to go.
