Our imagination went wild with all the things we could stuff in ground meat and wrap in bacon. This is the first one we tried and it was a HUGE hit! This thing tastes just like a supreme pizza! I was really surprised how easy it actually is to put together! It takes a bit of time, but it will be so rewarding once it is pulled out of the smoker! I am pretty certain this could also easily be done in the oven, but you just won’t get the same smokey flavor.  Below I will post the ingredients and step by step pictures! Ingredients:
1/2 can tomato paste

These jalopeno poppers will hit the spot if you are looking for something spicy and Paleo friendly for your next barbecue get together or tailgate party! The traditional stuffed jalopenos have cheese of some sort in it. Pre-paleo we stuffed it with everything from Boursin to cream cheese to cheddar. Now that we don’t have dairy in our diets we were seeking a creamy alternative to the cheeses. That is how guacamole stuffed peppers were born! We already had guacamole made up (I can add the recipe later) so I sliced the peppers down the center, stuffed them with guacamole, wrapped in bacon and stuck a small skewer stick through them. My husband grilled these, but you could just as easily make them on the stove top in a skillet. We thought for sure that when they were cooked that the guacamole would turn brown, but we were surprised to see that it stayed green (and delicious)! What started as some kind of experiment turned out to be a hit! Now we will be making these for every get together! Here is our version of guacamole stuffed peppers. Ok, with the kids AND the parents. The bacon keeps the chicken tenders moist and delicious! These took just minutes to prepare and were devoured shortly after cooking!

Ingredients: 
Chicken tenders
Bacon

– Season chicken with what ever seasoning you like for chicken. This time we just did salt and pepper. I like to season first so that the seasoning stays between the chicken and the bacon and makes it much more flavorful!

That was a mouthful! A delicious, mind blowing, Paleo mouthful!

Who knew cauliflower could taste this good?

StuffedSBS

Ingredients:

Bell Pepper

Jenny-O Turkey Sausage

2 eggs

Seasoning (I used Herbs de Provence)

8 strips of bacon

Kale (washed and chopped)

Garlic

Head of Cauliflower (washed and chopped)

Butter (for faux-tatoes)

Parsley

Instructions:

Peppers:

Mix meat, eggs, kale, seasonings, and garlic in a bowl.

Cut bell peppers in half, de-seed and set aside.

Add meat mixture to peppers!

Lay bacon strips on top!

Cook at 375 for about an hour.

Cauli-Mash Faux-Tatoes:

Boil chopped cauliflower until tender.

Drain.

Pulse in a food processor until desired constancy.

Move back to pan and add butter and parsley!

Enjoy!
