Chia Seed Jam
Recently we started buying the chia seed drinks and squeeze packs by MammaChia and my kids love them! The only problem is they can be quite expensive when two kids (and sometimes mom) want them every day! We picked up our bountiful basket last weekend and I received 8 pounds of fresh strawberries. I dehydrated 4 pounds and the kids ate two pounds fresh. With the remaining 2 pounds we decided to try our hand at some Chia Seed Jam. Most of the recipes I was finding online added regular sugar or maple syrup… neither of which I had on hand. I recently bought some coconut palm sugar and was wanting to try it! We bought coconut palm sugar because it does sweeten drinks and foods nicely, it has some nutrients (where regular sugar does not), and it does not spike your blood sugar. Authority Nutrition has some great insight on why coconut palm sugar is better for your health. I have been carrying around a bag of Bob’s Red Mill Chia Seeds and had no idea what to do with them until now. Chia seeds are packed with nutrients. Here is just a few of the health benefits of Chia seeds:

– Plant based protein
– 18% of the daily recommendation of Calcium
– Rich in antioxidants
Strawberry Chia Seed Jam Ingredients:
2 Tablespoons Chia Seeds
2 Tablespoons water
2 Tablespoons Coconut Palm Sugar
1.5 Cups of fresh strawberries

Instructions for Chia Seed Jam:
Put all ingredients in a blender and blend until smooth. I used my Ninja Blender and it worked great to finely puree the strawberries.
Put mixture into a sealed container. We used mason jars, but you could use anything that seals.
Place container in the refrigerator overnight to allow time for the seeds to hydrate and “gel”.
Enjoy! My boys used it on top of yogurt and ate it right out of the container. They also like to dip fruits like apples in it!
** You can totally leave out the sugar and it would taste just as great… especially if your strawberries are very ripe and sweet.

Can you use any other fruit for this? Strawberries are expensive here in Hawaii but maybe it’s worth it for a treat?
