    Mushroom and Zoodle Spaghetti!

    January 8, 2014 / 11 Comments

This is a favorite in our house! Even the kids eat it without complaining! Thanks to the Paderno World Cuisine A4982799 Tri-Blade Plastic Spiral Vegetable Slicer we can have the same texture as noodles without the grain! Before Paleo we were huge pasta eaters… now we don’t miss it at all and my husband actually prefers zoodles over spaghetti noodles!     Ingredients: Zucchini (Run it through the Paderno World Cuisine A4982799 Tri-Blade Plastic Spiral Vegetable Slicer or use some mad knife skills) Mushrooms (Optional. You can use grass fed beef) Butter (or animal fat or coconut oil) Simple Marinara (recipe found here)   Instructions: Bring a pot of water…

    Hearty Chicken and Veggie Soup

    January 7, 2014 / 1 Comment

This soup was actually made by accident. We were due to move the RV and I had a fridge full of fresh produce and a whole chicken that would go bad if I didn’t do something with it! This soup was so good I re-heated and ate it for 5 days straight! Hearty chicken and veggie soup ingredients: Whole Chicken Apple Cider Vinegar (We prefer Bragg’s) Any fresh vegetables you want! I used celery, onion, garlic, kale, carrot, zucchini, cabbage and tomato! Salt and other seasonings   Instructions: Boil whole chicken until done, Remove from water (SAVE WATER) De-bone. Set meat aside. Break the bones and put them back…

    Paleo Spaghetti (Squash)

    November 5, 2013 / 5 Comments

Paleo Spaghetti Squash!   Ingredients: 1 Medium Spaghetti Squash (Cut in half and scrap the seeds out) Home made tomato sauce (I used 1 can tomato paste, 1 can crushed tomato… no sugar, Cooked ground turkey and various italian spices)     Instructions: [wp_ad_camp_2] As seen in the picture above… poke holes in the squash, lay upside down on a baking pan, pour in about 1/4 cup of water and bake at 350 degrees for about 30-45 minutes until a knife will pierce through the skin easily. Remove from oven and flip over. Using a fork pull the “meat” away from the edges and it will come out in strings…
