About me and The Paleo Diet!
Well, Hello! Welcome!
First… I am a mom, homeschooler, wife, traveler, blogger, foodie and I could probably add maid to that list. I am BUSY! I am also overweight. The main reason I started this page was to track and remember the foods my family eats on a daily basis so that I will remember them.
Second… My goal is to be healthy. And for my family to be healthy. I have a child that is allergic to soy, dyes and tomatoes. We have chosen to try the Paleo way of eating because a bunch of friends are doing it and loving it. What do we have to lose? I started my weightless journey in October of 2013. At that time I was 306 pounds at my heaviest. I was constantly out of breath, had migraines and my feet would hurt really bad when I got up in the mornings. There was no way I could run with my boys. I was AFRAID to go to the doctor, so I didn’t. I knew something had to change. My body was no longer able to keep up with the weight that I put on it. I chose the Paleo diet to try out for two reasons. One, it was popular among my friends with great success. Two, I need a way of eating that didn’t require shakes, meal replacements, pills or other specialty items. I needed a way to LEARN to eat healthier that I could take with me when I had a function to attend or if I was dining out at a restaurant. I had to TEACH myself HOW to eat properly and forget all the junk I had ever been taught about low-fat, sugar-free foods. The best part of the Paleo diet is that I am not starving! I do calorie count with MyFitnessPal and I keep it within my allotted amount of calories. Now, As of October 2015 I am down 125 pounds! I have ran miles for time, trained at crossfit and I can now PLAY soccer and run with my boys! I have a long way to go, but I’ll get there.

Third… We all know eating healthy is expensive. You either have the money to spend on organic, all natural, fine foods… or like us, you don’t. That does not mean I don’t want my family to be healthy! Throughout my blog you will find references to some of our favorite money saving tips about canned foods and frozen vegetables the you can use with The Paleo Diet!
My goal here is to follow The Paleo Diet as closely as possible. No sugar, no processed foods, no grains. Just nuts, meat, veggies and occasional fruits. There will be times when my recipes use frozen veggies. Frozen is STILL better than none at all right? Are you following me? There are some things I will spend the extra money on… one of those is coconut oil! We also OCCASIONALLY eat processed cheese, but we are raw milk drinkers so our Paleo regimen does include some dairy. Don’t like it? Just leave it out!

I just read your post on our EC Fan page and checked out your blog! I follow Paleo as best I can too! Thanks for your great lunch ideas. My hubby just started and I needed help figuring out his lunches. Love your RV home! Hope you are doing well with your Paleo…I got off a bit over the holidays but am easing back in now.

Try eating raw75percent of your food you will feel better and loose more weight. Paleo is great but still has a lot of carbs if you cook with them

thank you for your inspirational story. I have had the Gastric bypass procedure 12 years ago…it saved my life! although, my journey did not stop there. I still struggle everyday, I have been on many diets since and now I had blood work complete recently and found out my blood pressure, cholesterol is elevated along with kidney and liver concerns. Even though, I know better just keeping my weight down (not low enough) it is not keeping me healthy. A friend spoke to me about the paleo diet, and now I’m researching the program. I came on your website and with all of your information I believe I can do this….I find preparation and planning challenging I have never been a “cook” there for I need receipts…Thank you keep up the great work! and pray for me.

Jenn, thank you for sharing! I am 4 days in and am struggling with the idea of not having a wine cooler with dark chocolate. Hi Jenn, im just wondering how you use avocado so much in packed lunches and dont have it brown by the time its ready to eat. Or is your husband just not particular. Thanks

Hi Dave! We lay a layer of saran wrap touching the exposed part of the avocado. No air on the flesh equals no browning. It also helps that the compartments on the lunchbox are small and airtight. Hope that helps!

If you keep the seed attached to half of the avocado before you eat it…it won’t brown.

Your story is very inspiring! My brother follows a mostly Paleo diet and has been trying to get me to do it. I’ve looked into it, but am not sure I can (or am willing) to give up everything it requires. But, for some reason (age or stress), I’ve started to gain weight recently, and am needing to make some changes…so I’m willing to give it a try.
Also, it looks like you updated your “about me” page in January…it would be great to get a more recent update on your progress. 🙂

Hi Jenn,
I’m almost 62, have been putting on weight the last years and started paleo 3 weeks ago. The first 2 weeks I lost 5 lbs. and 10 1/2 In. But the third week was nothing, in fact seemed to add 1/4″ in the stomach. I was eating the same as the first 2 weeks. Help. Got very discouraged so ate a few sweets and chips for Super Bowl. Want to go back on it. What should I expect? Frustrated ND Nana

Question about paleo, can you use a nut flour instead of regular? I really would like to try this lifestyle as I have a lot, A LOT of weight to lose so that I can breathe. Loving husband hyperventilates if there isn’t a bread nearby at meals. So you don’t make sandwiches, wraps, burritos?

My name is Heather! I read your blog and it gives me motivation. I did Crossfit hard for about two years with paleo and lost 50lbs. I had my daughter in July of 2013 and I have lost all my motivation to get back at the gym. I still pay for my monthly membership. Please help!!! Any suggestion would help.

I am so happy to find a paleo site that focuses on being practical and not going what I call “paleo crazy”. Most of us do not have the money to spend on $14/lb grass fed ground beef. We just don’t. And that you use Dairy! Seriously very excited to start following your blog!
